First of all, let me just say shout out to my GMM for getting me a new Crock-pot for Christmas! Hellooooo?! What rock was I under for all of these years?! (Don't get me wrong, I've owned a couple of these bad boys.. I just never had the desire to actually put them to use. In my mind, they seemed like more work than just good old fashioned dinner making. WRONG.)

I'm now a Crock-pot-aholic. Yep. I said it. I'm that girl that can't stop searching for recipes and scouring Pinterest for the best Crock-pot blog posts I can find. Between my 5 year old, who has me on the go with school drop offs and pickups, volunteering, church activities and now baseball added to the list, and then my 10 month old who is now walking and ALL over the place during the day, plus my everyday household duties.. this thing is a complete lifesaver. I love being able to put something on for dinner in the morning and not have to worry about it all day long! 

My goal is to eventually be able to work some magic like >> this lady << and be able to prep and freeze meals ahead of time for even more convenience. (She does 40 at a time! Pretty awesome.)

So far, this simple chicken fajita recipe has been my favorite!

 I used 4 boneless, skinless, thin-cut chicken breasts, semi-thawed & sprinkled with black pepper and half of a fajita seasoning packet.
2 green peppers, sliced. (Any variety -red, yellow- would taste great)
 2 onions, sliced. 
(The hubby likes onions a lot, so I tend to put more of those than the norm.)

Cook on low 4-6 hours, shred chicken (it will literally fall apart from the slow cooking) and add in any extras you desire- cheese, sour cream, etc.
Wrap in a flour tortilla and enjoy!
